Bacon Cheddar Crescent Rolls

I was hungry for a snack and threw these together after looking in my frig to see what I had on hand! And it’s only 3 ingredients!

1 can of Pillsbury crescent rolls

1/2 cup of shredded Cheddar or Colby jack cheese

1/4 cup of cooked, crumbled bacon

Directions:

Preheat oven to 350 degrees. Line a baking sheet with foil for easy clean up and spray lightly with non-stick spray. Unroll and separate the rolls directly on the baking sheet. Combine the cheese and bacon and place about a tablespoon of the mixture on the wide end of the rolls. Roll up securely and back for 10-12 mins or until golden brown.

 

Italian Dressing Caramelized Chicken

The best part about this recipe is that it only requires 3 ingredients and it is absolutely delicious.

The ingredients you’ll need:

  • 2.5 lbs-3 lbs Chicken Breast
  • 1 packet (.7 ounce) of dried italian dressing mix
  • 1/2 cup packed brown sugar

1. Preheat your oven to 350 degrees.

2. Line a 9×13 pan with a large piece of aluminum foil to prevent sticking.

3. Combine the packet of dried Italian dressing mix and 1/2 cup of brown sugar.

4. After cutting excess fat off chicken breasts, dip each piece and coat with the mix on each side. Any extra coating that remains can be sprinkled over.

5. Place chicken in oven for 15-20 minutes (depending on the size of the chicken breasts) and flip each piece over. Bake for an additional 15 minutes. Turn oven on broil for 2 minutes, flip chicken and broil for another 2 minutes.

Vanilla Cream Soda Cake

So you need a quick dessert and your pantry isn’t in the best of shape.  No need to panic! With a box of cake mix and a can of soda, you’re all set!

Cake:

1 box of Butter Recipe Cake Mix (I recommend Duncan Hines)

1 12oz can of Cream Soda (I recommend Dr. Brown’s)

1 tsp vanilla extract

1 tsp butter extract

Combine all the ingredients and mix until blended. Pour batter into prepared 9 X 13 pan and bake at 350 for 25-30 minutes. Remove from the oven and cool completely. Frost with your favorite buttercream icing or serve with fresh berries & cream 20150117_155116

There’s nothing better on home-made biscuits than home-made jelly! This is my absolute favorite jelly … EVER!!

1 quart apple juice
1 package (1.75 ounces) Sure Jell
4 1/2 Cups white granulated sugar
3 Tablespoons red cinnamon candies
How to make it

Combine the apple juice and Sure-Jell in a large pan. Bring to a rolling boil. Add sugar and candies and cook, stirring occasionally until candies are melted and sugar is dissolved. Bring mixture to a boil and cook for 2 minutes, stirring occasionally.
Remove from heat and let mixture settle down a few minutes. Skim the foam off the top. Pour into sterilized jars. A funnel works really good for this.
Suggestions:
Makes 6 to 7 pints of jelly

Easy Potato Casserole

Easy Potato Casserole

I love potatoes, but on a weeknight after a long day at work I do not want to peel them. This easy recipe takes canned sliced potatoes to a new level. Cans are a good thing. Don’t knock’em!

2 -15oz cans sliced white potatoes

¼ c chopped onions

1 TBSP butter

1 c shredded sharp cheddar cheese

¼ c Parmesan cheese

½ c Sour Cream

Season salt

Garlic Powder

In a large skillet, saute butter and onions until tender. Drain potatoes and add to pan with onions.  Continue cooking for 5-8 minutes or until the potatoes are tender. Season with seasoned salt and garlic powder to taste.

Transfer potatoes to large mixing bowl and add the cheeses and sour cream.  Gently combine and place in 8 x 8 baking dish that has been sprayed with cooking spray.  Sprinkle additional cheese on top if desired and bake at 350 degrees for 20-25 minutes.
